Rancho Sienna residents share favorite recipes

This is the time of year when many people love to create homemade entrees and desserts for enjoying with family and friends. In this blog, several Rancho Sienna residents share their favorite recipes. Some are family traditions, while others are recently discovered. All are delicious.

Coconut Cream Cake

Resident Cheryl Kelsey shares this dessert recipe from her mother, Joyce Coates, who passed away a year ago. Joyce often baked this cake at the request of Cheryl’s father, and it has become a family favorite. It’s kind of an easy, coconutty version of the famous “tres leches” cake, and it never fails to please a crowd in any season.

Ingredients

1 yellow cake mix
1 can Eagle Brand sweetened condensed milk
1 can cream of coconut
1 large container Cool Whip
1 package of coconut flakes

Directions

Bake cake. While still warm, poke holes all over the cake with a toothpick. Pour the Eagle Brand milk over cake, then pour can cream of coconut over it. Let it cool, then spread Cool Whip over the cake and evenly sprinkle on the coconut flakes. Refrigerate overnight before serving.
